1 small onion, chopped
2 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
2 cups vegetable broth
1/2 cup heavy cream
1 teaspoon sugar (optional, to balance acidity)
Salt and black pepper to taste
Fresh basil or parsley for garnish (optional)
Instructions
Heat olive oil in a medium pot over medium heat. Add chopped onion and cook until softened, about 3-5 minutes.
Stir in minced garlic and cook for 1 minute more until fragrant.
Pour in crushed tomatoes and vegetable broth. Bring the mixture to a simmer.
Reduce heat to low, cover, and let it simmer for 5-7 minutes to allow flavors to meld.
Remove the pot from heat. Carefully use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a regular blender and blend until smooth (be cautious with hot liquids).
Stir in the heavy cream and sugar (if using). Season with salt and black pepper to taste.
Return the soup to low heat and warm through for 1-2 minutes, but do not boil.
Ladle into bowls and garnish with fresh basil or parsley, if desired.
Notes
For a richer flavor, you can roast the tomatoes before adding them.
Adjust the amount of sugar based on the sweetness of your tomatoes and your preference.
