1 (6 ounce) sushi-grade tuna loin
1 tablespoon sesame oil
1 teaspoon black sesame seeds
1 teaspoon white sesame seeds
1/4 cup soy sauce
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1/2 teaspoon sugar
1 green onion, thinly sliced, for garnish
Instructions
Pat the tuna loin dry with paper towels.
Brush the tuna loin with sesame oil.
Sprinkle black and white sesame seeds evenly over all sides of the tuna, pressing gently to adhere.
Heat a non-stick skillet over high heat until very hot.
Sear the tuna loin for 30 seconds on each side, rotating to sear all four sides. The center should remain rare.
Immediately transfer the seared tuna to an ice bath for 2 minutes to stop the cooking process.
Remove the tuna from the ice bath and pat dry.
Wrap the tuna tightly in plastic wrap and refrigerate for at least 15 minutes.
While the tuna chills, prepare the dipping sauce: In a small bowl, whisk together soy sauce, rice vinegar, grated ginger, and sugar until the sugar dissolves.
Once chilled, unwrap the tuna and slice it into thin (1/4-inch) pieces.
Arrange the tuna slices on a serving plate.
Drizzle with the prepared dipping sauce or serve the sauce on the side for dipping.
Garnish with thinly sliced green onion before serving.
Notes
Use only sushi-grade tuna for this recipe, as it will be consumed rare.
Chilling the tuna makes it easier to slice thinly.
Adjust the amount of ginger or sugar in the sauce to your preference.
