1.5 lb Yukon Gold potatoes, diced into 1/2 inch cubes
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Soak the diced potatoes in cold water for at least 30 minutes to remove excess starch. Drain them completely and pat them very dry with paper towels. This step helps achieve crispiness.
In a medium bowl, toss the dry potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
Preheat your air fryer to 380 degrees Fahrenheit for 5 minutes.
Place the seasoned potatoes in the air fryer basket in a single layer if possible; do not overcrowd the basket. Work in batches if necessary.
Air fry for 15 minutes.
Shake the basket well to turn the potatoes.
Continue to air fry for another 5 to 10 minutes, or until the potatoes are golden brown and crispy on the outside.
Serve immediately as a breakfast side.
Notes
For extra crispiness, toss the potatoes with 1/2 teaspoon of cornstarch after oiling them.
Do not skip drying the potatoes after soaking; moisture prevents crisping.
