4 thin chicken breast cutlets (about 4 oz each)
1/2 cup all-purpose flour
1 large egg
1 tablespoon water
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Cooking spray (olive oil or avocado oil based)
Instructions
Pat the chicken cutlets dry with paper towels.
Set up a standard breading station with three shallow dishes. Place flour in the first dish.
In the second dish, whisk the egg and water together.
In the third dish, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper. Mix well.
Dredge each chicken cutlet first in the flour, shaking off excess.
Dip the floured cutlet into the egg mixture, allowing excess to drip off.
Press the cutlet firmly into the panko-Parmesan mixture to coat both sides completely.
Preheat your air fryer to 380 degrees Fahrenheit for 5 minutes.
Lightly spray the air fryer basket with cooking spray. Place the breaded cutlets in a single layer, ensuring they do not overlap.
Spray the tops of the cutlets lightly with cooking spray.
Air fry for 8 to 10 minutes, flipping halfway through. The internal temperature should reach 165 degrees Fahrenheit and the coating should be golden brown and crisp.
Serve immediately.
Notes
For extra crispiness, chill the breaded cutlets for 15 minutes before air frying.
Use thin-cut chicken breasts or pound regular breasts to about 1/4 inch thickness.
If your Parmesan is very moist, you may need slightly less egg wash.
