Make perfectly crispy polenta fries in your air fryer. This recipe covers preparing the polenta base, slicing, seasoning, and air frying for a crunchy exterior.

  • 4 cups water
  • 1 cup instant polenta or cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 tablespoons olive oil, plus extra for spraying
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano

Instructions

  1. Bring the water and salt to a boil in a medium saucepan.
  2. Slowly whisk in the polenta, stirring constantly to prevent lumps.
  3. Reduce heat to low and continue stirring for 5 to 7 minutes, or until the polenta is very thick and pulls away from the sides of the pan.
  4. Stir in the Parmesan cheese (if using), pepper, garlic powder, and oregano.
  5. Pour the hot polenta mixture into a loaf pan (approximately 9×5 inches) lined with parchment paper, spreading it into an even layer about 1 inch thick.
  6. Refrigerate for at least 2 hours, or until completely firm.
  7. Remove the chilled polenta from the pan and slice it into fry shapes (about 1/2 inch thick sticks).
  8. Lightly toss the polenta sticks with the 2 tablespoons of olive oil.
  9. Preheat your air fryer to 390°F (200°C).
  10. Place the polenta fries in a single layer in the air fryer basket, working in batches if necessary. Do not overcrowd the basket.
  11. Lightly spray the tops of the fries with additional olive oil spray.
  12. Air fry for 12 to 15 minutes, flipping halfway through, until the fries are golden brown and crispy on all sides.
  13. Serve immediately with your preferred dipping sauce.

Notes

  • For extra crispiness, you can lightly dust the fries with cornstarch before tossing with oil.
  • Prepare the polenta base a day ahead for faster assembly.
  • If you do not have instant polenta, adjust cooking time according to package directions, usually requiring longer simmering.
