Make delicious, crispy potato skins in your air fryer. This recipe is quick, easy, and perfect for a party appetizer.

  • 4 Russet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped chives
  • Sour cream, for serving

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Wash and dry the potatoes. Prick them all over with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Place the potatoes in the air fryer basket and cook for 20-25 minutes, or until tender.
  5. Let the potatoes cool slightly, then slice them in half lengthwise.
  6. Scoop out most of the flesh, leaving about a 1/4-inch shell.
  7. Place the potato shells back in the air fryer basket, cut-side up.
  8. Air fry for another 5-7 minutes, until the shells are golden and crispy.
  9. Fill each potato skin with crumbled bacon and shredded cheddar cheese.
  10. Air fry for 2-3 minutes more, until the cheese is melted and bubbly.
  11. Garnish with chopped chives and serve with sour cream.

Notes

  • You can add other toppings like sour cream, salsa, or jalapeños.
  • Make sure not to overcook the potatoes in the first step, or they might become too mushy to hold their shape.
