Make perfectly crispy potato wedges in your air fryer seasoned with fresh rosemary and garlic for a quick, flavorful side dish.

  • 2 large Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Wash and dry the potatoes thoroughly. Cut each potato into 8 even wedges.
  2. Soak the cut potato wedges in cold water for at least 30 minutes. This removes excess starch and helps them crisp.
  3. Drain the wedges completely and pat them very dry using paper towels. Moisture prevents crisping.
  4. In a medium bowl, toss the dry wedges with olive oil, dried rosemary, garlic powder, salt, and pepper until evenly coated.
  5. Preheat your air fryer to 400°F (200°C) for 5 minutes.
  6. Place the seasoned wedges in the air fryer basket in a single layer if possible; work in batches if necessary to avoid overcrowding.
  7. Air fry for 15 to 20 minutes, shaking the basket vigorously every 7 minutes to ensure even browning and crisping.
  8. Cook until the wedges are golden brown and crispy on the outside and tender inside.
  9. Serve immediately.

  • Use Russet or Yukon Gold potatoes for the best texture.
  • For extra crispiness, you can lightly spray the wedges with cooking spray halfway through the cooking time.
  • If you prefer fresh rosemary, use 1 teaspoon finely chopped fresh rosemary instead of dried.
  • Adjust cooking time based on the thickness of your wedges.
