Make light, crispy green beans in the air fryer with a coating that mimics tempura texture. Serve with a simple spicy dipping sauce.

  • 1 pound fresh green beans, trimmed
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon baking powder
  • 1/2 cup ice-cold sparkling water (or club soda)
  • Cooking spray (oil-based)
  • For Dipping Sauce: 1/4 cup mayonnaise, 1 tablespoon sriracha, 1 teaspoon soy sauce

Instructions

  1. Wash and thoroughly dry the green beans. Pat them completely dry with paper towels to help the batter stick.
  2. In a medium bowl, whisk together the flour, cornstarch, salt, pepper, and baking powder.
  3. Pour the ice-cold sparkling water into the dry ingredients. Whisk briefly until just combined. Do not overmix; a few lumps are fine. This thin batter is key for a tempura-like crispness.
  4. Preheat your air fryer to 380°F (195°C).
  5. Working in small batches, dip the dried green beans into the batter, letting excess drip off slightly.
  6. Lightly spray the air fryer basket with cooking spray. Arrange the battered green beans in a single layer in the basket. Do not overcrowd the basket; work in batches if necessary.
  7. Spray the tops of the battered beans lightly with cooking spray.
  8. Air fry for 8 to 10 minutes, flipping the beans halfway through cooking. The coating should look golden brown and crispy.
  9. While the beans cook, mix the mayonnaise, sriracha, and soy sauce in a small bowl for the dipping sauce.
  10. Remove the beans from the air fryer and serve immediately with the dipping sauce.

Notes

  • The colder the sparkling water, the crispier the coating will be.
  • For extra crispness, you can lightly spray the beans again halfway through the cooking time.
  • If you prefer a thinner coating, thin the batter slightly with one more tablespoon of cold water.
