Make crispy, flavorful sweet potato fries in your air fryer using a simple garlic and Parmesan coating. This recipe avoids sogginess for a satisfying side dish.

  • 2 large sweet potatoes, scrubbed and cut into 1/4-inch thick sticks
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried parsley (for garnish)

Instructions

  1. Soak the cut sweet potato sticks in cold water for at least 30 minutes. This removes excess starch and helps them crisp. Drain completely and pat them very dry with paper towels. This step is critical for crispiness.
  2. In a large bowl, toss the dry sweet potato sticks with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  3. Preheat your air fryer to 380°F (195°C) for 5 minutes.
  4. Place the seasoned sweet potatoes in the air fryer basket in a single layer, working in batches if necessary. Do not overcrowd the basket.
  5. Air fry for 10 minutes. Shake the basket well.
  6. Continue air frying for another 5 to 8 minutes, or until the fries are tender inside and slightly browned on the edges.
  7. Remove the basket from the air fryer. Immediately transfer the hot fries to a clean bowl.
  8. Sprinkle the grated Parmesan cheese over the hot fries and toss quickly to coat. The residual heat will melt the cheese slightly and help it adhere.
  9. Transfer to a serving plate, garnish with dried parsley, and serve immediately.

Notes

  • For the crispiest results, ensure the sweet potatoes are completely dry before tossing with oil and spices.
  • Do not add the Parmesan cheese before air frying, as it can burn at the high temperatures required for crisping the potatoes.
  • If your fries are not crisping enough, add 2-3 minutes of cook time at 400°F (200°C) after the initial cooking time.
