2 ears of corn, husked and cut into 2-inch pieces
1 tablespoon olive oil
1/4 teaspoon chili powder
1/4 teaspoon cumin
Pinch of salt
Pinch of pepper
2 tablespoons mayonnaise
1 tablespoon chopped fresh cilantro
1 tablespoon crumbled cotija cheese
1 teaspoon lime juice
Optional: extra chili powder for garnish
Instructions
Preheat your air fryer to 400°F (200°C).
In a bowl, toss the corn pieces with olive oil, chili powder, cumin, salt, and pepper until evenly coated.
Arrange the corn in a single layer in the air fryer basket.
Cook for 4-5 minutes, or until the corn is tender and slightly charred, shaking the basket halfway through.
While the corn is cooking, mix together the mayonnaise, cilantro, cotija cheese, and lime juice in a small bowl.
Once the corn is cooked, transfer it to a serving dish.
Dollop the mayonnaise mixture over the warm corn.
Garnish with a little extra chili powder if desired.
Notes
You can use fresh or frozen corn for this recipe.
Adjust the chili powder to your spice preference.
If you can’t find cotija cheese, feta cheese is a good substitute.
