Make delicious and crispy Mexican street corn in your air fryer in just 5 minutes. This recipe brings the vibrant flavors of elote right to your kitchen with minimal effort.

  • 2 ears of corn, husked and cut into 2-inch pieces
  • 1 tablespoon olive oil
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Pinch of salt
  • Pinch of pepper
  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon crumbled cotija cheese
  • 1 teaspoon lime juice
  • Optional: extra chili powder for garnish

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a bowl, toss the corn pieces with olive oil, chili powder, cumin, salt, and pepper until evenly coated.
  3. Arrange the corn in a single layer in the air fryer basket.
  4. Cook for 4-5 minutes, or until the corn is tender and slightly charred, shaking the basket halfway through.
  5. While the corn is cooking, mix together the mayonnaise, cilantro, cotija cheese, and lime juice in a small bowl.
  6. Once the corn is cooked, transfer it to a serving dish.
  7. Dollop the mayonnaise mixture over the warm corn.
  8. Garnish with a little extra chili powder if desired.

Notes

  • You can use fresh or frozen corn for this recipe.
  • Adjust the chili powder to your spice preference.
  • If you can’t find cotija cheese, feta cheese is a good substitute.
