Make perfectly crispy potato chips using your air fryer with this simple method. Learn the correct slicing and drying techniques for the best texture.

  • 2 medium Russet potatoes
  • 1 teaspoon olive oil (optional, for extra crispness)
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon paprika
  • Pinch of black pepper

Instructions

  1. Wash and thinly slice the potatoes using a mandoline slicer to about 1/16 inch thickness. Uniform thickness is key for even cooking.
  2. Place the potato slices in a large bowl of cold water. Soak for at least 30 minutes, or up to 2 hours, changing the water once if possible. This removes excess starch.
  3. Drain the potatoes completely. Lay the slices out on a clean kitchen towel or paper towels and pat them completely dry. Moisture causes sogginess.
  4. In a clean bowl, toss the dry slices with the olive oil, if using.
  5. In a separate small bowl, mix the salt, paprika, and pepper.
  6. Preheat your air fryer to 300°F (150°C).
  7. Place the potato slices in the air fryer basket in a single layer. Do not overlap them; work in batches if necessary to maintain airflow.
  8. Air fry for 10 minutes.
  9. Carefully shake the basket. Continue air frying in 2 to 3 minute intervals, checking frequently, until the chips are golden brown and crisp. Total cook time is usually between 14 to 18 minutes, depending on your air fryer model and slice thickness.
  10. Remove the chips immediately from the basket and transfer them to a bowl. Sprinkle with the seasoning mix while they are still hot.
  11. Let them cool for a few minutes before serving for maximum crunch.

Notes

  • For a no-oil version, skip step 3 and 4, but you may need to increase the cooking time slightly and check more often to prevent burning.
  • If you want a different flavor, substitute the seasoning mix with garlic powder and onion powder, or a dash of vinegar powder.
  • If your chips are not crisping, increase the temperature by 10 degrees and cook for 2 more minutes, watching closely.
