Learn how to make perfectly crispy, fluffy air fryer potato wedges using simple steps. This recipe delivers maximum crunch with minimal oil, making a fantastic, quick side dish or snack.

Ingredients

Scale
  • 4 large Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and dry the potatoes well. You do not need to peel them.
  2. Cut the potatoes lengthwise into even wedges, about 1/2 inch thick.
  3. Soak the cut wedges in cold water for at least 30 minutes to remove excess starch. This step helps them get crispier.
  4. Drain the wedges completely and pat them very dry with paper towels. Moisture is the enemy of crispiness.
  5. In a bowl, toss the dry wedges with olive oil until lightly coated.
  6. In a small bowl, mix the smoked paprika, garlic powder, onion powder, salt, and pepper.
  7. Sprinkle the seasoning mix over the oiled wedges and toss again to coat evenly.
  8. Preheat your air fryer to 400°F (200°C).
  9. Place the wedges in a single layer in the air fryer basket. Work in batches if necessary to avoid overcrowding.
  10. Air fry for 15 to 20 minutes, shaking the basket every 5 minutes, until the wedges are golden brown and crunchy.
  11. Serve immediately for the best texture.

Notes

  • For extra crispness, lightly spray the seasoned wedges with cooking spray just before the last 5 minutes of cooking.
  • If your wedges are not perfectly dry after soaking, they will steam instead of crisping up. Take your time drying them.
  • These pair wonderfully with burgers or dipped in ketchup or a simple yogurt-dill sauce.
