2 medium zucchini
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped (optional)
Instructions
Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into quarters, then cut those quarters into fry-sized sticks (about 3 inches long).
Place the zucchini sticks in a large bowl. Pat them dry thoroughly with paper towels to remove excess moisture; this step helps them crisp up.
Drizzle the olive oil over the zucchini sticks and toss to coat lightly.
In a small bowl, mix the garlic powder, salt, and pepper. Sprinkle this seasoning mix over the zucchini and toss again.
Preheat your air fryer to 400°F (200°C) for 5 minutes.
Place the seasoned zucchini sticks in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
Air fry for 8 minutes.
Carefully open the basket, sprinkle the grated Parmesan cheese evenly over the fries, and gently shake the basket to distribute.
Continue to air fry for another 3 to 5 minutes, or until the zucchini is tender and the cheese is melted and lightly browned.
Remove from the air fryer, sprinkle with fresh parsley if using, and serve immediately.
Notes
To prevent sogginess, always salt the cut zucchini and let it sit for 10 minutes before patting it very dry with paper towels.
For extra crispiness without breading, ensure the zucchini is in a single layer in the basket during cooking.
If you prefer a slightly softer fry, reduce the total cook time by 2 minutes.
