  • 2 Boneless, skinless chicken breasts
  • 1/2 cup Blanched slivered almonds
  • 1/4 cup Almond flour
  • 1 large Egg
  • 1 teaspoon Paprika
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper
  • 2 tablespoons Olive oil (for cooking)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet.
  2. Place the slivered almonds in a food processor. Pulse until they form coarse crumbs, resembling breadcrumbs. Do not over-process into a powder.
  3. In a shallow bowl, combine the almond crumbs, almond flour, paprika, garlic powder, salt, and pepper. Mix these dry ingredients well.
  4. In another shallow bowl, lightly beat the egg.
  5. Pat the chicken breasts dry with paper towels. This helps the crust stick.
  6. Dip each chicken breast first into the beaten egg, letting any excess drip off.
  7. Dredge the egg-coated chicken thoroughly into the almond mixture, pressing gently so the crust adheres well on all sides.
  8. Heat the olive oil in an oven-safe skillet over medium-high heat.
  9. Sear the crusted chicken breasts for 2-3 minutes per side until the crust is golden brown.
  10. Transfer the skillet to the preheated oven. Bake for 15-18 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  11. Remove from the oven and let the chicken rest for 5 minutes before slicing and serving.

  • For an extra crisp crust, you can lightly spray the crusted chicken with cooking spray before baking.
  • Make sure to use blanched slivered almonds for the best texture.
  • You can substitute chicken thighs for breasts if you prefer a moister result.
