- 1/2 cup Blanched slivered almonds
- 1/4 cup Almond flour
- 1 large Egg
- 1 teaspoon Paprika
- 1/2 teaspoon Garlic powder
- 1/4 teaspoon Salt
- 1/8 teaspoon Black pepper
- 2 tablespoons Olive oil (for cooking)
- Preheat your oven to 400°F (200°C). Lightly grease a baking sheet.
- Place the slivered almonds in a food processor. Pulse until they form coarse crumbs, resembling breadcrumbs. Do not over-process into a powder.
- In a shallow bowl, combine the almond crumbs, almond flour, paprika, garlic powder, salt, and pepper. Mix these dry ingredients well.
- In another shallow bowl, lightly beat the egg.
- Pat the chicken breasts dry with paper towels. This helps the crust stick.
- Dip each chicken breast first into the beaten egg, letting any excess drip off.
- Dredge the egg-coated chicken thoroughly into the almond mixture, pressing gently so the crust adheres well on all sides.
- Heat the olive oil in an oven-safe skillet over medium-high heat.
- Sear the crusted chicken breasts for 2-3 minutes per side until the crust is golden brown.
- Transfer the skillet to the preheated oven. Bake for 15-18 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes before slicing and serving.
