Instructions
Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang for easy removal.
Prepare the crust: In a medium bowl, mix 1 1/2 cups flour, 1/2 cup sugar, and salt. Cut in 1/2 cup cold butter until the mixture resembles coarse crumbs. Press this mixture firmly into the bottom of the prepared pan. Bake for 10 minutes.
Prepare the apple layer: In a small bowl, toss the diced apples with brown sugar and cinnamon. Set aside.

Use firm, tart apples like Granny Smith for the best texture and flavor balance against the sweet cheesecake.
For a quicker preparation, you can use a graham cracker crust instead of the flour-based shortbread crust.
If you skip the caramel drizzle, these bars are still excellent on their own.
