1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 cup apple cider
1/4 cup unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
For the Topping: 1/4 cup unsalted butter, melted
1/2 cup granulated sugar
1 teaspoon cinnamon
Instructions
Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners.
In a large bowl, whisk together the flour, 1 cup granulated sugar, baking powder, 1/2 teaspoon cinnamon, nutmeg, and salt.
In a separate medium bowl, whisk together the apple cider, 1/4 cup melted butter, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
While the muffins are baking, prepare the topping. In a shallow dish, combine the 1/2 cup granulated sugar and 1 teaspoon cinnamon. Melt the 1/4 cup butter in another shallow dish.
Once the muffins are out of the oven, let them cool in the tin for a few minutes.
While still warm, dip the top of each muffin into the melted butter, then dredge it in the cinnamon-sugar mixture.
Transfer the coated muffins to a wire rack to cool completely.
