Make a traditional Greek salad using fresh vegetables, feta cheese, and a simple oregano dressing. This recipe contains no lettuce and takes less than 15 minutes to prepare.

Ingredients

  • 2 large ripe tomatoes, cut into wedges
  • 1 large cucumber, peeled and sliced or chopped
  • 1 green bell pepper, seeded and sliced
  • 1/2 red onion, thinly sliced
  • 1 cup block feta cheese, cut into large cubes
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Pinch of salt
  • Freshly ground black pepper to taste

Instructions

  1. Prepare all your vegetables: cut the tomatoes, cucumber, and bell pepper. Slice the red onion thinly. Place all prepared vegetables and the olives into a large bowl.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the vegetables and gently toss to coat everything lightly.
  4. Arrange the feta cheese cubes on top of the dressed vegetables. Do not toss the feta with the vegetables, as it should remain mostly intact.
  5. Serve immediately.

Notes

  • Use high-quality, firm tomatoes for the best texture and flavor.
  • For an authentic presentation, serve the salad on a platter rather than in a deep bowl.
  • If you prefer a slightly creamier dressing, you can add a small dash of Dijon mustard to the whisked ingredients.
