Ingredients
Scale
2 cups cooked, shredded chicken breast
2 ripe avocados, mashed
1/4 cup plain Greek yogurt (optional, for extra creaminess and protein)
2 tablespoons fresh lime juice
1/4 cup finely chopped celery
2 tablespoons finely chopped red onion
1 tablespoon chopped fresh cilantro
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Place the shredded chicken in a medium mixing bowl.
In a separate small bowl, mash the ripe avocados until mostly smooth. Stir in the Greek yogurt, if using.
Add the mashed avocado mixture, lime juice, celery, red onion, cilantro, salt, and pepper to the chicken.
Mix all ingredients gently until everything is well combined and the chicken is coated in the creamy avocado dressing.
Taste and adjust seasoning as needed.
Serve immediately, or cover and chill for at least 30 minutes to allow flavors to meld. This is great for your next low carb lunch idea.
Notes
For best texture, use cold, pre-cooked chicken. Rotisserie chicken works well for a quick recipe.
If you are making this ahead for meal prep, add the lime juice generously to help prevent the avocado from browning too quickly.
Serve this keto chicken salad in crisp lettuce cups, on low-carb crackers, or alongside sliced cucumbers.
