6 large eggs
1 ripe avocado, mashed
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon apple cider vinegar
Salt, to taste
Black pepper, to taste
Paprika, for garnish
Instructions
Hard-boil the eggs: Place eggs in a saucepan, cover with cold water, and bring to a boil. Once boiling, remove from heat, cover, and let sit for 10-12 minutes. Drain and rinse with cold water.
Peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a small bowl.
Mash the avocado in a separate bowl until smooth.
Add the mashed avocado, mayonnaise, Dijon mustard, and apple cider vinegar to the egg yolks.
Mash and mix everything together until well combined and creamy. Season with salt and pepper to your liking.
Spoon or pipe the avocado-egg yolk mixture back into the egg white halves.
Garnish with a sprinkle of paprika.
Chill for at least 15 minutes before serving.
