1 pound yellow squash, thinly sliced
1/2 cup chopped onion
1/4 cup butter
1/4 cup all-purpose flour
1 1/2 cups milk
1/2 teaspoon salt
1/4 teaspoon black pepper
4 slices bacon, cooked and crumbled
1/2 cup shredded cheddar cheese
1/4 cup breadcrumbs
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, sauté the sliced squash and chopped onion in butter until tender.
Stir in the flour and cook for 1 minute.
Gradually whisk in the milk until smooth.
Bring to a simmer and cook until thickened, stirring constantly.
Season with salt and pepper.
Remove from heat and stir in the crumbled bacon and cheddar cheese.
Pour the mixture into a greased 8×8 inch baking dish.
