1 pound large shrimp, peeled and deveined
12 slices thin-cut bacon, halved lengthwise
1/4 cup honey
2 tablespoons brown sugar
1 tablespoon soy sauce
1 teaspoon Dijon mustard
1 clove garlic, minced
Instructions
Preheat your broiler to high and position an oven rack about 6 inches from the heat source. Line a baking sheet with foil and place a wire rack on top of the sheet.
Pat the shrimp very dry using paper towels. This helps the bacon crisp.
In a small bowl, whisk together the honey, brown sugar, soy sauce, Dijon mustard, and minced garlic to make the glaze. Set aside half of the glaze for basting later.
Wrap each shrimp tightly with a half-slice of bacon, securing the end with a toothpick if necessary.
Place the wrapped shrimp on the prepared wire rack. Brush the tops lightly with half of the reserved glaze mixture.
Broil for 4 to 6 minutes until the bacon starts to brown.
Carefully flip the shrimp. Brush the second side with the remaining glaze.
Broil for another 3 to 5 minutes, watching closely to prevent burning, until the bacon is crispy and the shrimp is opaque.
Remove from the oven and let cool slightly before serving. Remove toothpicks before serving.
Notes
For extra flavor, stuff the shrimp with a small piece of jalapeño or cream cheese before wrapping with bacon.
If you prefer baking, use a 400°F oven for 15-20 minutes, flipping halfway through.
