  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup salsa
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 12 corn tortillas
  • Cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet.
  2. In a skillet, heat the olive oil over medium-high heat. Add the chicken breasts and season with chili powder, cumin, garlic powder, onion powder, salt, and pepper. Cook until the chicken is no longer pink, about 6-8 minutes per side.
  3. Remove the chicken from the skillet and shred it using two forks.
  4. In a bowl, combine the shredded chicken, salsa, Monterey Jack cheese, and cheddar cheese. Mix well.
  5. Warm the corn tortillas by wrapping them in a damp paper towel and microwaving for 30-60 seconds, or by heating them in a dry skillet for a few seconds per side. This makes them more pliable.
  6. Spoon about 2-3 tablespoons of the chicken and cheese mixture into the center of each tortilla.
  7. Roll up the tortillas tightly to form taquitos.
  8. Place the taquitos seam-side down on the prepared baking sheet.
  9. Lightly spray the taquitos with cooking spray.
  10. Bake for 15-20 minutes, or until golden brown and crispy.

  • Serve with your favorite toppings like sour cream, guacamole, or pico de gallo.
  • For extra crispiness, you can bake them seam-side down for the first 10 minutes, then flip them and bake for another 10 minutes.
