Cinnamon Sugar Churro Bites (Baked Not Fried!)

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar, divided
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 1/4 cup unsalted butter, cut into pieces
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium saucepan, combine 1/2 cup of the granulated sugar, salt, water, and 1/4 cup butter.
  3. Heat over medium heat, stirring until the butter is melted and the sugar is dissolved. Bring the mixture to a boil.
  4. Remove the saucepan from the heat. Add the flour all at once and stir vigorously until a dough forms and pulls away from the sides of the pan.
  5. Transfer the dough to a bowl. Let it cool for about 5 minutes.
  6. Add the eggs one at a time, beating well after each addition until the dough is smooth and glossy. Stir in the vanilla extract.
  7. Transfer the dough to a piping bag fitted with a large star tip. Pipe small rounds or bite-sized pieces onto the prepared baking sheet.
  8. Bake for 18-20 minutes, or until the bites are puffed and golden brown.
  9. While the churro bites are baking, prepare the cinnamon sugar coating. In a small bowl, combine 1/2 cup granulated sugar and 1 tablespoon cinnamon.
  10. Once the churro bites are out of the oven, immediately brush them with the melted butter.
  11. Roll the warm churro bites in the cinnamon sugar mixture until well coated.
  12. Serve warm and enjoy!

Notes

  • You can also use a spoon to drop small mounds of dough onto the baking sheet if you don’t have a piping bag.
  • These are best enjoyed fresh, but leftovers can be stored in an airtight container at room temperature for up to 2 days.
