Make this Baked French Toast Casserole for a wonderful brunch. This recipe results in a custard that soaks the bread perfectly, giving you a soft, moist center and slightly crisp edges. You will love this simple, make-ahead breakfast.

Ingredients

Scale
  • 1 loaf (about 1 pound) sturdy bread like challah or brioche, cut into 1 inch cubes
  • 6 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • Butter for greasing the dish

Instructions

  1. Lightly butter a 9×13 inch baking dish.
  2. Arrange the bread cubes evenly in the prepared dish.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined. This is your custard base.
  4. Slowly pour the custard mixture evenly over the bread cubes. Press down gently to help the bread absorb the liquid.
  5. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight, to allow the bread to fully soak up the custard.
  6. When ready to bake, preheat your oven to 350°F (175°C). Remove the plastic wrap.
  7. Bake for 45 to 55 minutes, or until the casserole is puffed, golden brown, and the center is set (a knife inserted near the center comes out clean or with moist crumbs).
  8. Let it rest for 10 minutes before slicing and serving warm.

Notes

  • For the best custard consistency, make sure the bread soaks for the full recommended time. This prevents dry spots.
  • Use bread that is slightly stale; fresh bread can become too soggy.
  • Serve with fresh berries or a dusting of powdered sugar.
