4 (6 ounce) cod fillets
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon Dijon mustard
1 teaspoon minced garlic
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1 tablespoon olive oil
1 lemon, sliced for garnish
Instructions
Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish or line it with parchment paper.
In a small bowl, whisk together the honey, soy sauce, Dijon mustard, minced garlic, thyme, and black pepper to create the glaze.
Pat the cod fillets dry with paper towels. Brush both sides of the fillets lightly with olive oil.
Place the cod fillets in the prepared baking dish. Brush half of the honey glaze evenly over the top of the fillets.
Bake for 10 minutes. Remove the dish from the oven and brush the remaining glaze over the fish.
Return the dish to the oven and bake for another 5 to 8 minutes, or until the fish flakes easily with a fork and the internal temperature reaches 145 degrees Fahrenheit. Watch carefully to prevent the honey from burning.
Garnish with fresh lemon slices before serving.
Notes
To prevent the honey from burning, bake the fish at 400 degrees Fahrenheit and apply the second layer of glaze halfway through the cooking time.
If your cod fillets are very thick, you may need to add 2 to 3 minutes to the total cooking time.
Serve this dish with roasted asparagus or steamed rice for a complete meal.
