This one-pan meal features juicy baked chicken and perfectly roasted potatoes infused with lemon, herbs, and garlic. It is simple, healthy, and a complete meal for weeknight dinners.

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1.5 lbs small red or yellow potatoes, cut into 1-inch pieces
  • 1 large lemon, thinly sliced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine potatoes, olive oil, minced garlic, rosemary, thyme, salt, and pepper. Toss to coat evenly.
  3. Arrange potatoes in a single layer on a large baking sheet.
  4. Place chicken pieces among the potatoes.
  5. Top chicken and potatoes with lemon slices.
  6. Bake for 30-35 minutes, or until chicken is cooked through and potatoes are tender and lightly browned.
  7. Serve hot.
