1.5 lbs boneless, skinless chicken thighs or breasts
1.5 lbs small red or yellow potatoes, cut into 1-inch pieces
1 large lemon, thinly sliced
4 cloves garlic, minced
2 tbsp olive oil
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1/2 tsp salt
1/4 tsp black pepper
Instructions
Preheat oven to 400°F (200°C).
In a large bowl, combine potatoes, olive oil, minced garlic, rosemary, thyme, salt, and pepper. Toss to coat evenly.
Arrange potatoes in a single layer on a large baking sheet.
Place chicken pieces among the potatoes.
Top chicken and potatoes with lemon slices.
Bake for 30-35 minutes, or until chicken is cooked through and potatoes are tender and lightly browned.
Serve hot.
Notes
For extra crispiness, broil for the last 2-3 minutes.
Marinate chicken for at least 30 minutes for more flavor.
Use bone-in, skin-on chicken for richer flavor and crispier skin. Adjust baking time accordingly.
