  • 4 bone-in pork chops (about 1-inch thick)
  • 2 lbs Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • Optional: Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato chunks with 1 tablespoon of olive oil, rosemary, garlic powder, onion powder, salt, and pepper.
  3. Spread the seasoned potatoes in a single layer on a large baking sheet.
