  • 1/4 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon black pepper
  • For the Garlic Aioli:
  • 1/2 cup mayonnaise
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut the zucchinis into 1/2-inch thick sticks, resembling fries.
  3. In a medium bowl, toss the zucchini sticks with olive oil until lightly coated.
  4. In a separate shallow dish, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper.
  5. Dredge each zucchini stick in the breadcrumb mixture, ensuring it’s well coated.
  6. Arrange the coated zucchini fries in a single layer on the prepared baking sheet.
  7. Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.
  8. While the fries are baking, prepare the garlic aioli: In a small bowl, whisk together the mayonnaise, minced garlic, lemon juice, and a pinch of salt.
  9. Serve the hot zucchini fries immediately with the garlic aioli for dipping.
