- 3 large overripe bananas, mashed
- 1/3 cup melted unsalted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup granulated sugar
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, mash the bananas thoroughly.
- Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt.
- Add the sugar, egg, and vanilla extract; mix until just combined.
- Add the flour and mix until the batter is smooth. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

- Use bananas that are heavily spotted or black for the best flavor and moisture.
- For a richer flavor, substitute half the white sugar with packed light brown sugar.
