Make simple, creamy, dairy-free popsicles using just bananas and coconut milk.

Ingredients

  • 3 large ripe bananas, peeled and frozen
  • 1/2 cup full-fat coconut milk, chilled
  • 1 teaspoon vanilla extract (optional)
  • 2 tablespoons shredded unsweetened coconut (for coating, optional)

Instructions

  1. Place the frozen banana chunks, chilled coconut milk, and vanilla extract (if using) into a high-speed blender or food processor.
  2. Blend the mixture until it becomes completely smooth and creamy, scraping down the sides as needed. The texture should resemble soft-serve ice cream.
  3. Spoon the mixture carefully into popsicle molds, leaving a small space at the top for expansion.
  4. Insert popsicle sticks into the molds.
  5. Freeze for at least 6 hours, or until completely solid.
  6. If using a coating, lightly moisten the outside of the frozen popsicles and roll them immediately in shredded coconut before serving.
  7. To release, briefly run the outside of the mold under warm water.

Notes

  • Use very ripe bananas for the best sweetness and texture.
  • Ensure your coconut milk is cold; this helps the mixture freeze better.
  • For a different flavor, add 1 tablespoon of cocoa powder before blending for chocolate coconut pops.
