- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1 cup milk
- 1 teaspoon vanilla extract
- 2 ripe bananas, mashed
- 2 tablespoons melted butter, plus more for the griddle
- Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl. Whisk them together.
- In a separate bowl, whisk the egg, milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients. Mix until just combined; do not overmix the batter.
- Gently fold in the mashed bananas. A few lumps are fine.
- Heat a lightly oiled griddle or large skillet over medium heat.
- Pour about 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2 to 3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the second side until golden brown.
- Serve immediately with your preferred toppings.
Notes
- For extra fluffiness, let the batter rest for 5 minutes before cooking.
- Use very ripe, spotty bananas for the best flavor and sweetness.
- Substitute whole wheat flour for all-purpose flour for a slightly healthier option.
