  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons melted butter
  • 1 ripe banana, mashed

Instructions

  1. Mix the flour, baking powder, salt, and sugar in a large bowl.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Add the wet ingredients to the dry ingredients. Mix until just combined; do not overmix.
  4. Gently fold in the mashed banana.
  5. Heat a lightly oiled griddle or frying pan over medium-high heat.
  6. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  7. Cook until bubbles appear on the surface and the edges look set, about 2 to 3 minutes.
  8. Flip the pancakes and cook the other side until golden brown, about 1 to 2 minutes more.
  9. Serve immediately with your favorite toppings.
