1 cup mashed ripe bananas (about 2-3 medium)
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1/4 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1/2 cup chopped walnuts, plus more for topping
Instructions
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
In a large bowl, combine the mashed bananas, granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Mix until well combined.
Add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix.
Gently fold in the chopped walnuts.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. Sprinkle a few extra chopped walnuts on top of each muffin.
Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
