1.5 pounds ground beef
1 cup panko breadcrumbs
1/2 cup milk
1 egg
1/4 cup finely chopped onion
2 cloves garlic, minced
1/4 cup ketchup, plus more for glaze
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon salt
1/2 teaspoon black pepper
12 slices bacon, halved
1/4 cup BBQ sauce
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, combine the ground beef, panko breadcrumbs, milk, egg, chopped onion, minced garlic, 1/4 cup ketchup, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix gently until just combined. Do not overmix.
Shape the meat mixture into small, bite-sized balls, about 1.5 inches in diameter.
Wrap each meatball with a half-slice of bacon. Secure with a toothpick if needed.
Place the bacon-wrapped meatloaf bites on the prepared baking sheet.
Bake for 20-25 minutes, or until the bacon is crispy and the meatloaf is cooked through.
While the meatloaf bites are baking, prepare the glaze. In a small bowl, mix the BBQ sauce with a little extra ketchup if you prefer a sweeter glaze.
During the last 5 minutes of baking, brush the meatloaf bites generously with the BBQ glaze.
Return to the oven for the remaining 5 minutes to allow the glaze to caramelize slightly.
Remove from oven and let cool slightly before serving. Remove toothpicks before eating.
Notes
For an extra kick, add a pinch of cayenne pepper to the meatloaf mixture.
You can make these ahead of time and reheat them in the oven or microwave.
