These BBQ Bacon-Wrapped Meatloaf Bites are a fun and flavorful twist on classic meatloaf, perfect for game day or any casual gathering. They’re bite-sized, easy to eat, and packed with delicious smoky BBQ flavor.

  • 1.5 pounds ground beef
  • 1 cup panko breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup ketchup, plus more for glaze
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 slices bacon, halved
  • 1/4 cup BBQ sauce

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, panko breadcrumbs, milk, egg, chopped onion, minced garlic, 1/4 cup ketchup, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix gently until just combined. Do not overmix.
  3. Shape the meat mixture into small, bite-sized balls, about 1.5 inches in diameter.
  4. Wrap each meatball with a half-slice of bacon. Secure with a toothpick if needed.
  5. Place the bacon-wrapped meatloaf bites on the prepared baking sheet.
  6. Bake for 20-25 minutes, or until the bacon is crispy and the meatloaf is cooked through.
  7. While the meatloaf bites are baking, prepare the glaze. In a small bowl, mix the BBQ sauce with a little extra ketchup if you prefer a sweeter glaze.
  8. During the last 5 minutes of baking, brush the meatloaf bites generously with the BBQ glaze.
  9. Return to the oven for the remaining 5 minutes to allow the glaze to caramelize slightly.
  10. Remove from oven and let cool slightly before serving. Remove toothpicks before eating.

Notes

  • For an extra kick, add a pinch of cayenne pepper to the meatloaf mixture.
  • You can make these ahead of time and reheat them in the oven or microwave.
  • Serve with extra BBQ sauce for dipping.
