  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup BBQ sauce, plus more for drizzling
  • 4 cups chopped romaine lettuce
  • 4 slices bacon, cooked and crumbled
  • 2 hard-boiled eggs, chopped
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 cup ranch dressing or BBQ dressing

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush chicken breasts with BBQ sauce. Grill for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then dice.
  3. In a large bowl, combine chopped romaine lettuce, crumbled bacon, chopped eggs, diced avocado, cherry tomatoes, sliced red onion, and blue cheese (if using).
  4. Add the diced BBQ chicken to the salad.
