Create delicious BBQ-Glazed Mini Meatloaves, a delightful twist on a classic. These individual meatloaves are perfect for a weeknight dinner or a casual gathering, topped with a tangy barbecue glaze.

  • 1.5 pounds ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup finely chopped onion
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
  3. Divide the mixture into 6 equal portions and shape them into mini loaves. Place them in a baking dish.
  4. In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and Dijon mustard for the glaze.
  5. Spread half of the glaze over the top of the mini meatloaves.
  6. Bake for 20 minutes.
  7. Remove from oven, spread the remaining glaze over the loaves, and bake for another 10-15 minutes, or until cooked through and the glaze is bubbly.
  8. Let rest for a few minutes before serving.

Notes

  • For a richer flavor, you can add a pinch of garlic powder to the meatloaf mixture.
  • If you don’t have apple cider vinegar, white vinegar or even a splash of lemon juice can be used in a pinch.
  • Feel free to adjust the sweetness and tanginess of the glaze to your preference.
