Ingredients

  • All-Purpose Flour: 2 cups
  • Granulated Sugar: 3/4 cup (plus 1/4 cup for streusel)
  • Baking Powder: 1 tablespoon
  • Salt: 1/2 teaspoon
  • Egg: 1 large
  • Milk: 1/2 cup
  • Melted Butter: 1/2 cup
  • Vanilla Extract: 1 teaspoon
  • Fresh or Frozen Blueberries: 1 1/2 cups
  • For Streusel: 1/4 cup all-purpose flour, 1/4 cup granulated sugar, 3 tablespoons cold unsalted butter (cubed)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. Prepare the streusel: In a small bowl, mix 1/4 cup flour and 1/4 cup sugar. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Set aside in the refrigerator.
  3. In a large bowl, whisk together 2 cups flour, 3/4 cup sugar, baking powder, and salt.
  4. In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
  5. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula just until combined. Do not overmix; a few lumps are fine.
