3 large eggs
1 tablespoon whole milk or heavy cream
1 teaspoon unsalted butter
Pinch of salt
Freshly ground black pepper to taste
Instructions
Crack the eggs into a small bowl. Add the milk or cream, salt, and pepper. Whisk vigorously until the mixture is uniform in color and slightly frothy.
Place a small non-stick skillet over low heat. Add the butter and let it melt completely until it coats the bottom of the pan. Do not let the butter brown.
Pour the egg mixture into the warm skillet. Let the eggs sit undisturbed for about 30 seconds until the edges just begin to set.
Using a heat-resistant spatula, gently push the cooked egg from the edge toward the center, tilting the pan so the uncooked egg flows underneath.
Continue this slow pushing and folding motion every few seconds. Keep the heat low.
When the eggs are mostly set but still look slightly wet and glossy, remove the pan from the heat immediately. The residual heat will finish the cooking process.
Serve immediately for a creamy texture. For fluffier results, stir slightly more vigorously during the cooking process.
Notes
For a richer flavor, substitute half-and-half for milk or cream.
If adding cheese, stir it in during the last 30 seconds of cooking, just before removing the pan from the heat.
For a gourmet touch, sprinkle fresh chopped chives over the finished eggs.
