Instructions

  1. Whisk the dry ingredients: flour, baking powder, salt, and sugar, together in a large bowl.
  2. In a separate bowl, whisk the milk, egg, and melted butter until combined.
  3. Pour the wet ingredients into the dry ingredients.
  4. Mix gently until just combined. Do not overmix; a few lumps are fine. Overmixing develops gluten, leading to tough pancakes.
  5. Heat a lightly buttered griddle or large non-stick pan over medium heat. The griddle is ready when a drop of water sizzles immediately.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 2 to 3 minutes, or until bubbles form and pop on the surface and the edges look set.
