Honey Garlic Glazed Roasted Carrots with Thyme

Make easy, flavorful roasted carrots coated in a sweet and savory honey garlic glaze, finished with fresh thyme.

Ingredients

  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Place the cut carrots on the prepared baking sheet. Drizzle with olive oil and toss to coat evenly.
  3. Roast the carrots for 15 minutes until they begin to soften.
  4. While the carrots roast, whisk together the minced garlic, honey, soy sauce, and apple cider vinegar in a small bowl.
  5. Remove the carrots from the oven. Pour the honey garlic mixture over the carrots and toss gently to coat them completely.
  6. Return the carrots to the oven and roast for another 10 to 15 minutes, or until the carrots are tender and the glaze is caramelized.
  7. Remove from the oven, sprinkle with salt, pepper, and fresh thyme. Toss lightly before serving.

Notes

  • For extra caramelization, you can briefly place the carrots under the broiler for the last 1-2 minutes, watching closely to prevent burning.
  • If you do not have fresh thyme, use 1/2 teaspoon of dried thyme mixed into the glaze before roasting.
  • You can substitute maple syrup for honey if desired for a slightly different sweetness profile.
