A recipe for a moist, from-scratch strawberry layer cake featuring fresh strawberries and a light cream cheese frosting, perfect for celebrations.

  • 1 3/4 cups granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry puree (from fresh strawberries)
  • 1/4 cup fresh strawberry puree (for frosting)
  • 1 pound cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1/2 teaspoon salt (for frosting)
  • 2 cups fresh strawberries, hulled and sliced (for filling and topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter to the dry ingredients and beat with an electric mixer on low speed until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the eggs, buttermilk, vanilla extract, and 1/2 cup strawberry puree.
  5. Gradually add the wet ingredients to the dry ingredients, mixing on medium speed until just combined. Do not overmix.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  9. To make the frosting, beat the softened cream cheese and 1/2 cup butter until smooth.
  10. Gradually add the sifted powdered sugar and 1/2 teaspoon salt, beating until creamy. Mix in the 1/4 cup fresh strawberry puree.
  11. Once cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting over the top and arrange half of the sliced fresh strawberries over the frosting.
  12. Top with the second cake layer. Frost the top and sides of the entire cake.
  13. Decorate the top with the remaining sliced strawberries before serving.

Notes

  • For the best strawberry flavor, use ripe, fresh strawberries for both the puree and the filling.
  • If you do not have buttermilk, mix 1 cup of milk with 1 tablespoon of white vinegar or lemon juice and let it sit for 5 minutes before using.
  • Chill the cake for at least 30 minutes before slicing for cleaner cuts.
