1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1/4 cup cornstarch
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons vegetable oil
1/2 cup orange juice
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon honey
1 clove garlic, minced
1 teaspoon grated fresh ginger
1/4 teaspoon red pepper flakes (optional)

Instructions
In a medium bowl, toss the chicken pieces with cornstarch, salt, and pepper until evenly coated.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
In the same skillet, whisk together the orange juice, soy sauce, rice vinegar, honey, minced garlic, grated ginger, and red pepper flakes (if using). Bring to a simmer and cook for 2-3 minutes, or until the sauce has slightly thickened.
Return the cooked chicken to the skillet and toss to coat with the orange sauce.
Cook for another 1-2 minutes, allowing the sauce to further thicken and glaze the chicken.
Serve immediately over cooked rice, garnished with sesame seeds and green onions if desired.

For crispier chicken, you can pan-fry or bake the coated chicken pieces separately until golden brown before adding them to the sauce.
