1 can (15 ounces) black beans, rinsed and drained
1 cup cooked quinoa
1/2 cup breadcrumbs
1/4 cup finely chopped onion
1 clove garlic, minced
1 teaspoon cumin
1/2 teaspoon chili powder
Salt and pepper to taste
2 tablespoons olive oil
Instructions
In a medium bowl, mash the black beans with a fork until mostly smooth.
Add the cooked quinoa, breadcrumbs, chopped onion, minced garlic, cumin, chili powder, salt, and pepper. Mix well to combine.
Form the mixture into four patties.
Heat the olive oil in a skillet over medium heat.
Cook the patties for about 7-8 minutes per side, until golden brown and heated through.
Serve hot on your favorite buns with your preferred toppings.
Notes
For a spicier burger, add a pinch of cayenne pepper.
If you don’t have breadcrumbs, you can pulse a slice of bread in a food processor.
These burgers can also be baked at 375°F (190°C) for 20-25 minutes, flipping halfway through.
