Make a traditional Southern Blackberry Cobbler featuring a sweet, baked fruit filling topped with a tender buttermilk biscuit topping.

  • 6 cups fresh or frozen blackberries
  • 1 cup granulated sugar (adjust to berry sweetness)
  • 1/4 cup all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces (for filling)
  • 1 1/2 cups all-purpose flour (for topping)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar (for topping)
  • 1/2 cup cold buttermilk
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Prepare the filling: In a large bowl, gently combine the blackberries, 1 cup sugar, 1/4 cup flour, lemon juice, vanilla, and cinnamon. Mix until the berries are lightly coated.
  3. Pour the berry mixture into the prepared baking dish. Dot the top of the fruit evenly with the small pieces of cold butter.
  4. Prepare the topping: In a separate medium bowl, whisk together the 1 1/2 cups flour, baking powder, salt, and 1/4 cup sugar.
  5. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  6. Pour in the cold buttermilk and stir just until a shaggy dough forms. Do not overmix.
  7. Drop spoonfuls of the dough evenly over the top of the berry filling. Leave small gaps between the dough mounds to allow steam to escape.
  8. Brush the tops of the dough mounds lightly with the beaten egg wash.
  9. Bake for 40 to 45 minutes, or until the topping is golden brown and the filling is bubbly.
  10. Let the cobbler cool on a wire rack for at least 20 minutes before serving.

Notes

  • If you use frozen blackberries, do not thaw them first; use them directly in the recipe.
  • For a crispier topping, you can sprinkle an extra tablespoon of granulated sugar over the dough before baking.
  • Serve warm with vanilla ice cream or fresh whipped cream.
