Instructions

  1. Pat salmon fillets dry with paper towels. This helps achieve a crispy crust.
  2. Generously coat both sides of each salmon fillet with blackened seasoning. Press the seasoning gently to ensure it adheres well.
  3. Heat olive oil or avocado oil in a large cast-iron skillet or heavy-bottomed pan over medium-high heat until shimmering.
  4. Add butter to the pan; once melted, swirl to coat the bottom of the pan.
  5. Carefully place salmon fillets, skin-side down if applicable, in the hot skillet. Do not overcrowd the pan; cook in batches if necessary.
  6. Sear for 3-5 minutes per side, depending on thickness, until the salmon is cooked through and a dark, crispy crust forms. For skin-on salmon, cook mostly skin-side down until crispy, then flip for a minute or two to finish.
  7. Remove salmon from the skillet and let rest for a minute or two before serving.
  8. Serve immediately with lemon wedges and a sprinkle of fresh parsley, if desired.
