  • 1 cup milk
  • ½ cup ricotta cheese
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon lemon zest
  • ½ cup fresh blueberries

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, ricotta cheese, egg, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Gently fold in the lemon zest and blueberries.
  5. Heat a lightly oiled griddle or frying pan over medium heat.
  6. Pour about ¼ cup of batter for each pancake onto the hot griddle.
  7. Cook for 2-3 minutes per side, or until golden brown and cooked through.

  • For extra lemon flavor, add a squeeze of fresh lemon juice to the batter.
  • If you don’t have fresh blueberries, frozen ones work well too.
