4 cups Whole Milk
1 cup Heavy Cream
6 ounces Semi-sweet dark chocolate, chopped
1/4 cup Granulated sugar (adjust to taste)
1/4 teaspoon Salt
1/2 cup Bourbon
1/2 cup Bailey’s Irish Cream
Whipped cream and chocolate shavings for topping
Instructions
Combine the whole milk and heavy cream in a medium saucepan over medium heat. Warm the mixture until it just begins to steam around the edges. Do not boil.
Add the chopped dark chocolate, sugar, and salt to the warm milk mixture.
Whisk constantly until the chocolate is completely melted and the mixture is smooth and slightly thickened. This takes about 3 to 5 minutes.
Remove the saucepan from the heat. Stir in the bourbon and Bailey’s Irish Cream until fully incorporated.
Taste the hot chocolate and add more sugar if you prefer it sweeter.
Serve immediately in mugs, topped generously with fresh whipped cream and chocolate shavings.
Notes
For an extra rich flavor, substitute half the milk with evaporated milk.
If you prefer a different spirit, try substituting the bourbon with dark rum or peppermint schnapps.
To make this a ‘Hot Chocolate Bar’ option, keep the base hot and serve the spirits on the side so guests can spike their own mugs.
If you do not have semi-sweet chocolate, use milk chocolate, but reduce the added sugar by half.
