This breakfast burrito casserole is a comforting and hearty dish, perfect for feeding a crowd. It combines classic breakfast burrito ingredients like eggs, sausage, cheese, and tortillas into an easy-to-make casserole.

  • 1 pound breakfast sausage, cooked and crumbled
  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 (8-inch) flour tortillas, cut into 1-inch strips
  • 2 cups shredded cheddar cheese
  • 1/2 cup salsa, plus more for serving
  • 1/4 cup chopped green onions, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Layer half of the tortilla strips evenly in the bottom of the prepared baking dish.
  4. Sprinkle half of the cooked sausage over the tortillas.
  5. Top with half of the shredded cheddar cheese.
  6. Pour half of the egg mixture evenly over the cheese.
  7. Repeat the layers with the remaining tortillas, sausage, cheese, and egg mixture.
  8. Spoon dollops of salsa over the top of the casserole.
  9. Bake for 30-35 minutes, or until the eggs are set and the casserole is lightly golden brown.
  10. Remove from the oven and let stand for 5 minutes before serving.
  11. Garnish with chopped green onions and serve with extra salsa on the side.

Notes

  • You can customize this casserole with your favorite fillings, such as bell peppers, onions, or black beans.
  • Prepare this casserole the night before and refrigerate. Cover tightly with plastic wrap. Bake as directed, adding an extra 10-15 minutes to the baking time.
