Create flaky, appealing puff pastry bites featuring creamy brie and tart cranberry sauce. These appetizers bake up beautifully, offering a perfect sweet and savory treat for your next gathering.

  • 1 package (14.1 ounces) all-butter puff pastry, thawed
  • 8 ounces brie cheese, rind removed and cut into small cubes
  • 1/2 cup whole cranberry sauce
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon water (for egg wash)
  • Flour, for dusting

Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. Lightly flour your work surface. Unfold the puff pastry sheets.
  3. Use a round cookie cutter (about 2.5 inches in diameter) to cut circles from the pastry. You should get about 16-20 circles per sheet.
  4. Place half of the pastry circles on the prepared baking sheets.
  5. Top each circle with a small cube of brie cheese, leaving a small border around the edge.
  6. Place about 1/2 teaspoon of cranberry sauce on top of the brie.
  7. Brush the edges of the pastry circles lightly with the egg wash (whisk the egg and water together).
  8. Place a second pastry circle on top of the filling and gently press the edges together with the tines of a fork to seal completely. You want to make sure no filling escapes.
  9. Brush the tops of the sealed bites with the remaining egg wash. This helps them get golden brown.
  10. Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown. Watch closely for that beautiful flaky finish.
  11. Let the bites cool slightly on the baking sheet before serving warm.

Notes

  • You can use brie wedges instead of cubes if that is easier for you.
  • If you prefer a sweeter bite, gently warm the cranberry sauce first to make it easier to spoon onto the pastry.
  • For an extra festive look, sprinkle a tiny pinch of coarse sugar on top before baking.
