Make a rich and creamy broccoli cheddar soup on the stovetop in under 30 minutes. This recipe yields a comforting, cheesy soup similar to popular restaurant versions.

  • 2 tablespoons unsalted butter
  • 1/2 cup chopped yellow onion
  • 1/4 cup all-purpose flour
  • 4 cups vegetable broth
  • 2 cups fresh broccoli florets
  • 1 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Whisk in the flour and cook for 1 minute, stirring constantly to make a roux.
  4. Slowly whisk in the vegetable broth until smooth. Bring the mixture to a simmer, stirring occasionally.
  5. Add the broccoli florets, salt, pepper, and nutmeg. Cook until the broccoli is tender, about 8 to 10 minutes.
  6. Reduce the heat to low. Stir in the milk.
  7. Remove the pot from the heat. Gradually add the shredded cheddar cheese, stirring until the cheese is completely melted and the soup is smooth and creamy. Do not boil the soup after adding the cheese.
  8. Serve immediately.

Notes

  • For a thicker soup, mash about one cup of the cooked broccoli against the side of the pot before adding the cheese.
  • Use sharp or extra-sharp cheddar for the best cheese flavor.
  • You can substitute chicken broth for vegetable broth if desired.
